This moist cake is flavorful and has a lot less fat than most holiday treats. It's also nice with a sprinkle of confectioners' sugar or a dollop of fat-free whipped topping.
Ingredients
For 8 servings, you will need:
| 2 cups all-purpose flour |
| 1 teaspoon ground ginger |
| 1 teaspoon each baking powder and baking soda |
| 1 cup margarine |
| 1 cup packed brown sugar |
| 1 cup molasses |
| 1 cup unsweetened applesauce |
| 1 cup low-fat buttermilk |
| 1 cup frozen, thawed egg substitute |
| 1 teaspoon vanilla extract |
| 1 cup raisins |
| 1 orange rind |
Directions
Preheat oven to 350º F. Lightly spray an 8-inch square baking pan with nonstick cooking spray; set aside.
In a small bowl, stir together the flour, ginger, baking powder, and baking soda. In a large bowl, use an electric mixer to beat together the margarine and sugar until blended.
Add the molasses, applesauce, buttermilk, egg substitute, and vanilla; beat on low speed until blended. Stir in the flour mixture by hand, until thoroughly combined.
Fold in the raisins and orange rind. Pour the batter into the prepared pan. Bake for 30 to 35 minutes, or until a cake tester inserted in the center comes out dry. Transfer the pan to a wire rack to cool.
